Turmeric Jeweled Basmati Rice

  1. Fry garlic and ginger until light golden brown
  2. Add cardamom pod, cinnamon, bay leaf, rice, turmeric powder and apricots.
  3. Season with salt. Cover with 1” of water and cook slowly for 8-12 minutes Remove from heat, cover and let stand for 5 minutes
  4. Empty into serving pan and add almonds. Sprinkle with chopped parsley and mint, and serve.
